We grow an open pollinated yellow corn variety, Wapsie Valley, that has 10% deep red kernels. You will see the red flecks in the ground corn. Use coarse polenta for toothsome polenta or grits. Soaking in warm water shortens cooking time. Our ground corn is freshly stone milled at Meadowlark Community Mill in Ridgeway, Wisconsin. The freshness brings out the true, sweet, corn flavor. You will never want to go back to store-bought polenta or cornmeal. Use within 1 month or refrigerate or freeze.
