Pricing is per pound hanging weight (prior to cutting and trimming). An average lamb is 45 +/- pounds. Pricing will be calculated by the exact weight of your lamb x $15.00 plus butcher fees. Here is the breakdown of cost:
A whole lamb typically hangs at 45 +/- pounds. 45 x $15.00 = $675
The butcher fee is typically $140 for a total of $815.00.
Approximately 30% of the 45 pounds is lost in the butchering process leaving 31.5 pounds of meat for your freezer. A whole lamb at retail price is $945.00, so purchasing wholesale gives you a 10-15% discount!
