It is the perfect, original fajita steak. Preparing it right is the key to this steak becoming one of your favorites. Use an acid-based marinade for a few hours or overnight. Then pat dry, season, and apply hot heat, either on a grill or in a cast iron skillet. Do not overcook as this steak is most tender when served rare or medium rare, thinly sliced across the grain.
