An ethnic favorite but practically undiscovered in the US, this buttery-textured, meaty-flavored protein has no waste and is rich in B-12, zinc, iron and the good fats of 100% grass-fed meats. Like a good corned beef, tongue should be simmered slowly and for a long time. Add seasonings to the water or season after it is well cooked.
