A mixture of cuts from the forequarter and hindquarter give you a family-pleasing variety. Your quarter is custom cut for you. Choose grind, thickness, package size, etc. We walk you through the process so you can buy with confidence. 

Pricing is per pound hanging weight (prior to cutting and trimming.) An average hanging quarter is 160 pounds. Pricing will be calculated by exact weight of your quarter x $6.59. Here is a breakdown of the cost:

A quarter of a typical steer hangs at 160 +/- pounds. 160 * $6.59 = $1,054.40

The butcher fee is typically $400 +/- for a total of $1,454.40

Approximately 30% of the 160lbs is lost in the butchering process after bones and such are removed, leaving about 112lbs of beef for your freezer. 

$1,454.40/112lbs = $12.98 +/- per pound for everything from ground beef to filet mignon. A quarter steer at full retail is $2,000, so purchasing wholesale gives you a 20% discount!
