Turkey Red is a hard red winter wheat brought to North America in the mid-1800's. It has a nutty, fresh flavor profile. Our Turkey Red flour is customed milled for us locally at Rooster Milling, right here in Wisconsin. This sifted flour retains some flecks of bran, and, as a result, more nutrition and a creamy tan color. Our fall-planted crop of Turkey Red contains 13.6 % protein and a falling number of 412. No preservatives or additives means it is best stored refrigerated or frozen.
