Turkey Red is a hard red winter wheat brought to North America in the mid-1800's. It has a nutty, fresh flavor profile. Our Turkey Red flour is customed milled for us locally at Rooster Milling, right here in Wisconsin. Whole grain flours contain all germ, bran and nutrition. This crop of Turkey Red contains 13.6 % protein and a falling number of 412. No preservatives or additives means it is best stored refrigerated or frozen.
